Vegetarian Mexican Rice
Rice - 1 Cup
Tomato Pureed 1 Cup or 3 large tomatoes
Water - 1 cup
Salt - 1 tsp
Black pepper - 1/2tsp
Corn - 1/2 cup
Onion - 1 sliced or chopped
garlic - 5 -6 finely minced
Wash & soak rice in water for 10 minutes. Then drain out excess water and air dry for 5 minutes.
Heat oil and add cumin seed, garlic and onion. After 2 mins add rice and saute for 5 minutes till its cooked brown. Add corn kernels and jalapeno and saute for another 2 minutes.
Add tomato puree and water for 15 minutes with covered lid.
This is vegetarian version of authentic mexican rice. Normally its cooked in chicken broath. But here I have made this rice with vegetable stock.
