Ingredients

Ingredients:
150 grams unsalted butter, soft
3 deciliters sugar
2 teaspoons vanilla
2 tablespoons sifted cocoa powder
4 deciliters all-purpose flour
2 teaspoons baking powder
1 1/2 deciliters milk
Glaze:
6 tablespoons strong cold coffee
2 tablespoons sifted cocoa powder
2 teaspoons vanilla
3 1/2 deciliters powdered sugar
Garnish:
1 cup sweetened coconut flakes

Melt the butter and let it cool. Beat eggs and sugar until fluffy. Add the dry ingredients alternately with the milk and melted butter. Pour batter into a greased and floured baking pan, 20 x 30 cm.

Bake the cake on the middle rack of the oven for 25 - 30 min.

Let cake cool. Meanwhile, melt the butter for the glaze. Add the other ingredients while stirring.

Spread glaze on the cake. Cut the cake into square pieces.

Into a small bowl put coconat flakes and drop food coloring over. mix with your hand to evenly distribute the cocolr. Sprinkle each piece with colored coconut.

I also piped some melted semi-sweet chocolate over the top.

About

The love holiday is almost over, but that doesn't mean that we'll forget to share this lovely feeling in the days to come. In Nashville, we had a day filled with warm sunshine, which gave me a special boost after all the snow and cold we had last week. Yes, it was a wonderful day :) I baked this cake yesterday beacuse my daughter wanted to share a special treat with her friends and teachers. I hid two pieces for my husband and me and we enjoyed them with our coffee this morning.
