Yoghurt Honey Madeleines

These Madeleines are a bit on a dry side but the texture was soft because of yoghurt added and had a slight fragrance of honey. They tastes better the next day, just store them in an airtight container in room temperature. Good to go with a cuppa of coffee.

  • 1 egg egg (70g)
  • 20 g honey
  • 50 g sugar
  • 40 g natural yoghurt
  • 90 g plain flour
  • 1/2 teaspoon baking powder
  • 70 g melted butter

Instructions

Grease a Madeleine mould with soft butter and set aside.

Gently whisk the egg. Add sugar and honey, then whisk until the sugar is dissolved.

Add natural yoghurt and whisk vigorously until the batter becomes foamy.

Gradually add the sifted plain flour and baking powder into the batter mix. Whisk until just combined and it forms a thick paste.

Finally, add the melted butter in two batches, mixing well after each addition until fully incorporated.

Scoop the batter into the prepared Madeleine mould using a spoon.

Bake in a preheated oven at 180°C for approximately 12 minutes, or until a skewer inserted into a Madeleine comes out clean.

Remove the Madeleines from the mould and place them on a wire rack to cool completely.
