Arroz con Leche (also known as rice pudding) is a comfort dessert. After your first bite, all the hassels of the day seem to melt away and you are just left with the blissful taste of spicy cinnamon and chewy grains of rice. Although this desserts seems to hail from Latin America, it is actually an international dish. You can find different versions of rice pudding throughout Europe (sweet and savory) and Asia. Asian recipes include the use of coconut milk and tropical fruits such as mango. This is the version I grew up with. I hope it stirs up fond childhood memories as it does for me.
Ingredients:
3 cups heavy cream
3 cups milk
1 cup Arborio rice
2 cinnamon sticks
1 lemon, zested
1 pinch salt
1 cup sugar
