Barbecue Chicken Salad

We often think of barbecue chicken salad as something we eat in restaurants and not at home.  I am here telling you that this salad is as easy to make at home as any. All you need is a few canned goods and fresh vegetables.  If you cannot find tortilla strips, you can substitute with fried or grilled onions.  This barbecued chicken salad is perfect as a main dish for any summer meal.

Barbecue Chicken Salad


2 skinless, boneless chicken breast halves
2 heads romaine lettuce, rinsed and chopped
1 fresh tomato, chopped
1 bunch cilantro, chopped
1 avocado, cut into cubes
1 can whole kernel corn, drained
1 can black beans, drained and rinsed
1 cup fried tortilla strips
1/2 cup Ranch dressing
1/2 cup barbecue sauce
