Barbecue Chicken Salad

Ingredients

2 skinless, boneless chicken breast halves
2 heads romaine lettuce, rinsed and chopped
1 fresh tomato, chopped
1 bunch cilantro, chopped
1 can whole kernel corn, drained
1 can black beans, drained and rinsed
1 Avocado,cut into cubes

Preparation

Preheat the grill for high heat.

Lightly oil the grill grate. Season chicken with salt and pepper on both sides. Place chicken on the grill, and cook 6 minutes per side, or until juices run clear. Remove from heat, cool, and slice.

Mix lettuce, tomato, cilantro, corn, and black beans in a large bowl. Top with the grilled chicken slices, avocado and tortilla strips.

Drizzle ranch dressing and barbecue sauce over the top of the salad.
