Summer Vegetable Burgers with Crunchy Corn

If you can't imagine enjoying a vegetable burger, then you just haven't been introduced to the right one. This burger is one of my favorite summer dinners. The crunchy corn and crispy sage really make this burger extraordinary.

Summer Vegetable Burgers with Crunchy Corn
Serving Size: 4 patties (~250 calories/pattie)

Ingredients
1/4 cup quinoa, dry
1 ear of raw corn, kernels removed
1/2 cup black beans, cooked
1/4 medium onion, roughly chopped
1 organic egg
10 big leaves of fresh sage*
2 tablespoons coconut oil or organic butter
sea salt and pepper
4 pieces of sprouted grain bread or 4 poppy seed rolls (optional)
2 cups mixed baby greens

* Toast up left over sage leaves in a little olive oil over medium heat. They are an absolute delight on top of these burgers and even tossed in a salad.
