Food & Wine Pairing: Moroccan Spiced Grilled Lamb Chops and Pinot Noir

The coming of springtime rings in the season of outdoor eating and entertaining. We love nothing more than to fire up the barbecue on warm evenings and enjoy our meals al fresco, especially with a good bottle of wine. To celebrate the season, we asked our friends at Meiomi Wines, located in Napa Valley, to pair their award-winning Pinot Noir with some of their favorite dishes. Their Pinot Noir is exceptionally versatile, making it the ideal choice to pair with just about any food. It's a medium-bodied wine with beautiful notes of dark fruits and hints of tobacco and cedar. Try it with these Moroccan Spiced Lamb Chops. They just beg to be grilled alongside tender potatoes and cumin-scented carrots!

Moroccan Spiced Grilled Lamb Chops
4 servings

1 tablespoon Oregano
1 tablespoon Cardamom
1 tablespoon Turmeric
1/4 tablespoon All Spice
1/4 teaspoon Cloves
Salt & Black Pepper to taste
Cayenne to taste
4 lamb chops
Take a rack of lamb and cut into chops. Cover with spices and let marinate in the refrigerator overnight.

Grill to your desired temperature. For medium-rare, aim for an internal temperature of 130° F, but remove from grill at about 120° as the meat will continue to cook.
