Panna Cotta Ingredients:
165 grams granulated extra fine sugar
4 sheets gelatin
600 milliliters half and half
300 milliliters heavy cream
20 grams vanilla bean paste extract
Mulled Wine Topping:
375 milliliters merlot wine
4 grams lemon zest
4 grams strip navel orange peel
2 grams star anise
1 cinnamon stick
2 grams whole cloves
55 grams granulated extra fine sugar
4 sheets gelatin
Optional garnishes: strips of orange or candied ginger, chocolate shavings, pomegranate arils, etc..
Instructions for the Panna Cotta:
Heat the half and half, sugar, and vanilla until it comes to a simmer.
Bloom the 4 sheets of gelatin in cold water, then whisk into the hot cream mixture.
Whisk in the cold heavy cream, portion the mixture into small ramekins, and let it set overnight.
Instructions for the Mulled Wine Topping:
Place all topping ingredients except for the gelatin into a pot, bring to a boil, then set aside and cool. Store it overnight in the fridge with the spices for an extra punch of flavor.
The next day, strain out the spices and place the liquid into a pot.
Bloom the gelatin in cold water, then whisk it into the wine mixture and boil for 5 minutes.
Remove from heat and cool for 10 minutes before topping the set panna cotta.
Garnish before serving.
