Tirolese

About

A low fat Italian cheese from the mountains of Val Pusteria. It's aged for up to 20 weeks. It's about 10 cm tall, 40 cm wide in circular shape. It is slightly dry, colored dark yellow, and the dough is elastic but can be brittle if well aged. It has small, irregular holes with a spicy flavor.
