About This Food

An Italian semi-hard cheese made form sheeps' milk. The name 'pepato' means, "with pepper" and the cheese has black peppercorns added to the curd during the process. It is made in Sicily and is an important part in regional cooking. It is aged from 2-4 months, but it can also be aged for only 10 days.
