About This Food

Oarweed is a kelp that can be shredded and pickled to be used as a condiment. It preserves well in dried form. Oarweed is high in glutamic acid,and is under the flavor profile of umami. Oarweed is one of the best species of seaweed for making flour. In Japan it is used in bean stews because it speeds up cooking time by softening the beans and thickening the stew. To use, just add a few strips (up to 12cm total) of dried oarweed to the bottom of the pan, put beans on top and cook as normal. After a lot of boiling it will become flavorful and tender.
