About This Food

An Italian firm, cows' milk cheese from Piedmont in Raschera family made, at least 900 m above sea level, in Alpine areas of the province of Cuneo. It has D.O.P. status. "Di Alpeggio" means alpine and is used when the milk comes from herds that graze abot 900 m in one of 9 areas that have the right to produce the cheese. It's aged for 60 to 90 days in a square shape. It is intensely yellow-colored.
