  • 1 Lemon, organic preferred
  • 2 teaspoons Honey(optional)
  • 4 slices fresh ginger
  • 2 cups Unsweetened apple juice or water

In a medium-sized saucepan, heat the apple juice and ginger. Juice the lemon and add, with the rinds, to the juice mixture. Bring to a boil and simmer.

Strain through a sieve into 2 mugs, and sweeten with honey, if desired.
