Jerusalem Artichoke Focaccia Flat Bread – flour free

Ingredients

10.5 oz. cooked artichokes into small cubes
3 eggs
2 tbsp. Psyllium Husk Fiber (Available in Health food stores)
3 tbsp. Skyr (similar to Greek yogurt)
1 tsp. baking powder
1 tsp. salt
1.7 oz. ground nut meal, for example almond flour
rosemary
olive oil
sea salt

Preparation

Preheat oven to 375 °F

Peel the artichokes and cut them into small cubes.

Boil them in a medium pot with plenty of water and cook them until they are tender. Let cool completely.

Add diced egg and skyr (similar to Greek yogurt) and stir well. Add Psyllium Husk Fiber, almond flour, baking powder and salt. Mix thoroughly.

Flatten the dough on a baking sheet lined with parchment paper and smooth it out with a spoon. Hint: if you apply a little oil with your hand before laying down the paper, the parchment paper will stick to the pan and make it easier to spread out the dough.

Brush the Focaccia with olive oil. Sprinkle with rosemary and salt flakes to taste.

Bake for 25-30 minutes until golden brown. Cool and serve in wedge like pieces.

About

I try to avoid flour and fast carbohydrates in general, so when I bake, it is mostly with almond or hazelnut flour and Psyllium Husk Fiber. That is also the case with this flour free foccacia, which goes perfect with a soup, or as a substitute for normal bread, when making a sandwich.
