Eggplant rolls with tomato,garlic and herbs
This recipe was cooked by my Grandma and was her signature recipe. It’s very delicious and garlic with herbs adds the amazing flavor to the eggplant. It’s easy to cook, fast and the ingredients may be found practically in every house.

- 1 eggplant
- 3 tomatoes(optional)
- 1/2 cup flour
- pepper
- salt
- 2 cloves garlic
- 4 tablespoons olive, vegetable or sunflower oil
- 2 tablespoons mayonnaise
- dill(optional)
- parsley(optional)
- basil(optional)
Instructions
Step 1
<a href="/8BSVY4LZ">Wash </a>your eggplant and tomatoes.
Step 2
<a href="/3JDX2Q84">Slice </a>the eggplant lengthways (the thinner the <a href="/3JDX2Q84">slices,</a> the betterJ
Step 3
<a href="/H7TNTGFZ">Season </a>each <a href="/3JDX2Q84">slice </a>with <a href="/DPSVTKVY">salt </a>and pepper and let it stay for 5-10 minutes.
Step 4
Set the <a href="/NZ2LK8CC">frying </a>pan on medium <a href="/XZFHRHHF">heat,</a> pour the cooking oil, <a href="/6BTCX64M">coat </a>each eggplant <a href="/3JDX2Q84">slice </a>with flour and <a href="/NZ2LK8CC">fry </a>each <a href="/3JDX2Q84">slice </a>until golden <a href="/D434P8MH">brown </a>on each side and soft.
Step 5
Remove the <a href="/NZ2LK8CC">fried </a>eggplant on the paper towel so that the oil would drain.
Step 6
<a href="/3JDX2Q84">Slice </a>the tomato and then <a href="/XZBDDD5G">cut </a>the <a href="/3JDX2Q84">slices </a>in <a href="/JXYLJGZ5">halves </a>(they should look like little timbersJ.Peel your garlic.
Step 7
<a href="/LTSH5D6W">Crush </a>the garlic with the garlic <a href="/4NXSJQ3D">press.</a>
Step 8
<a href="/8BSVY4LZ">Wash </a>and <a href="/XZBDDD5G">cut </a>your herbs. (I normally use dill or parsley)
Step 9
<a href="/7S3QCKWK">Mix </a>the <a href="/LTSH5D6W">crushed </a>garlic, herbs, and mayo. Add some <a href="/DPSVTKVY">salt </a>and pepper to the sauce.
Step 10
Take the eggplant <a href="/3JDX2Q84">slice,</a> cover it with mayo sauce and add one or two of your <a href="/XZBDDD5G">cut </a>tomato ‘timber”)
Step 11

Repeat with all the eggplant <a href="/3JDX2Q84">slices.</a>
