- 1/4 teaspoons turmeric powder
- 1/4 teaspoons ginger paste
- 1 teaspoons panch phoran (5-spice)
- 1 count big dry red chilli, split in two or three pieces
- 1/2-3/4 teaspoons red chilli powder(optional)
- 1 1/2-2 teaspoons granulated sugar
- 1/2 teaspoons dry mango powder
- to taste salt
- 1 tablespoons vegetable oil
- 1 count shallot, finely chopped
- 1/4 teaspoons garlic paste
- 4-5 count medium sized ripe red tomatoes, chopped
Instructions
Step 1
Heat oil in a pan, remove it from the heat and carefully add the dry red chilli.
Step 2
Put the pan back on heat, add a generous pinch of sugar and let it caramelise, then add the panch phoran.
Step 3
Once the panch phoran starts crackling, immediately add the onions. Sauté them until they turn translucent, then add the ginger and garlic paste along with a dash of water.
Step 4
Fry until the ginger-garlic starts to turn golden.
Step 5
Add the tomatoes and stir them on high heat for about a minute, then lower the heat and let them simmer until they become mushy.
Step 6
Begin seasoning the tomatoes.
Step 7
Add the salt, sugar, turmeric, red chilli powder, and dry mango powder.
Step 8
Stir well and taste the relish at this stage to adjust the seasonings.
Step 9
Cook the relish on high heat until the liquid in the tomatoes is reduced.
Step 10
Remove the contents and transfer to a serving bowl.
Step 11
Serve the relish hot, cool, or at room temperature.
