- Graham Cracker crumbs
- 12 pounds Cottage Cheese
- 40 Eggs
- 8 cups Fructose (natural sugar), first measure
- 2 cups Fructose (natural sugar), second measure
- 12 cups Flour
- 1/4 cup Vanilla
- 7 pounds Sour Cream
- 3 tablespoons Cream of Tartar
- 2 cups Chocolate Chips or Carob Chips(optional)
Instructions
Step 1
Mix cottage cheese, vanilla, and sour cream.
Step 2
Separate eggs. Add the yolks, first measure of fructose, and flour to the cottage cheese mixture and mix until smooth.
Step 3
In a separate bowl, beat egg whites, second measure of fructose, and cream of tartar together until stiff.
Step 4
Fold the beaten egg white mixture into the first (cottage cheese) mixture very lightly with a spatula.
Step 5
If desired, chocolate chips or carob chips can be added at this time.
Step 6
Smooth 1-1/4 cups graham cracker crumbs on the bottom of a 9-inch diameter pan for each pie to be made.
Step 7
Add the cake mixture to each pan to a depth of about three inches.
