  • 1.5 teaspoons olive oil
  • 1/4 cup frozen butter or margarine (tub style)
  • 1 teaspoon salt (use 3/4 teaspoon if sugar is omitted)
  • 1.5 cups unbleached white flour
  • 2 tablespoons sugar(optional)
  • ice cubes
  • 1/3-1/2 cup cold water

Step 1

Place flour in the food processor (steel blade). Add sugar and salt, then mix until well blended.

Cut butter or margarine into 1/2 inch pieces and add to the flour mixture. Process briefly until it resembles coarse meal.

2-3 seconds

Add oil and 1/3 cup cold water (without the ice cube). Process for 2-3 seconds until the dough begins to collect into a ball. Do not overprocess!

If the dough is too dry, add a few more drops of cold water and blend briefly.

Remove the ball of dough, lightly flour, and wrap in wax paper. Place in a plastic bag. Chill in the refrigerator for at least 2 hours (if in a hurry, try chilling in the freezer for 20 minutes).

Roll out the dough and bake as usual. It can be fully or partially prebaked if desired.
