Spinach and Ginger Soup

  • 1 tablespoon oil
  • 1 medium onion
  • 250 gram potatoes, peeled and diced
  • 1.25 litre vegetable stock
  • 2 carrots, peeled and sliced
  • 300 gram spinach, coarsely chopped
  • 1 green chilli, chopped
  • 1 tablespoon grated fresh ginger
  • 2 cloves
  • 12 black peppercorns
  • 2 tablespoon cream or yogurt
  • 0.5 lemon juice(optional)

Instructions

Step 1

Heat the oil in a pot.

5 minutes

Add the onion and fry for a few minutes until they start to brown. Add the diced potatoes. Stir well and reduce the heat to medium and cook for 5 minutes.

Add the vegetable stock and spices (cloves and black peppercorns) and bring to a boil. Add the carrots.

15 minutes

Simmer for 15 minutes.

10 minutes

Add the spinach and simmer for 10 more minutes.

until smooth

Blend in a food processor until smooth. Check the seasoning; you might want to add some salt and pepper.

When serving the soup, pour some cream in each bowl and add a few drops of lemon juice (the latter being optional).
