Cherries In Red Wine

Ingredients

4 cups dry red wine
1 1/2 cups sugar
2 pounds Bing cherries, stemmed, pitted
1/2 teaspoon grated orange peel
1/8 teaspoon whole cloves
1/8 teaspoon ground nutmeg

Preparation

Stir wine and sugar in heavy large saucepan over medium heat until sugar dissolves. Add cherries, orange peel, cloves and nutmeg and bring to boil.

Boil until reduced to 2 cups, about 25 minutes.

If preserving, spoon equal amounts of cherries into sterilized jars. Then equally divide the liquid and spices amongst the jars. Seal jars and process in water bath as you would jam. Set jars aside and make sure all lids are sealed.

If you are not preserving the cherries simply cover and chill until cold.
