  • 0.5 cup Plain soy milk/skim milk
  • 1 clove Crushed/minced garlic
  • 1 bag 16 oz frozen or fresh spinach
  • Parmesan(optional)

Step 1

If using fresh spinach, wash and de-stem the leaves. Steam or microwave the spinach until cooked. Transfer the cooked spinach, garlic, and milk to a blender. Blend until a smooth sauce consistency is achieved. Start with less milk for a thicker sauce, adding more as needed, depending on the spinach's liquid content.

Taste the sauce and add salt to your preference.

Serve the sauce over spaghetti or other pasta.
