  • 1/2 bunch cilantro, chopped
  • salt and pepper(optional)
  • 1 tablespoons olive oil
  • 2 limes, juiced
  • 1/2 red onion, peeled and sliced thin
  • 1 1/2 pounds watermelon, seeded and cut into small/medium chunks
  • 2 avocados, pitted, peeled and cut into small chunks

Combine the chopped cilantro, salt and pepper (to taste), olive oil, lime juice, thinly sliced red onion, 1-inch watermelon chunks, and 1/2-inch avocado chunks in a mixing bowl. Toss gently until all ingredients are well combined.
