Sourdough Herbed Croutons

8 cups of cubed slightly stale sourdough bread (or any bread you have around)
1 – 2 tablespoons of olive oil or melted butter
1 – 2 teaspoons of pink himalayan salt
1 teaspoon of herbs de provence
1/2 tablespoon of finely shredded parmesan cheese

Move oven rack to the top slot and set oven to broil.
Meanwhile, slice and cube bread into 1 inch cubes. Place on a baking sheet in one even layer and drizzle with olive oil. Sprinkle evenly with salt, herbs de provence, and parmesan cheese.
Place in oven and with door ajar, broil for about 2 minutes or until they begin to brown to your liking. Remove pan and then rotate the bread cubes for even browning. Return to oven and continue to broil until they are browned to your liking.
Remove from oven and cool. Serve on top of your favorite salad, in french onion soup, or just as a snack!
