  • 1/2 teaspoon grated lemon rind

  • 1/2 cup confectioner's sugar
  • 1 cup blueberries
  • 1 teaspoon grated lemon rind
  • 1/4 cup butter or margarine melted(optional)
  • 1 egg lightly beaten
  • 8 ounce nonfat lemon yogurt
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1/3 cup sugar
  • 2 cup all-purpose flour

Step 1

Preheat oven to 400 degrees Fahrenheit. In a large bowl, combine the all-purpose flour, 1/3 cup sugar, salt, baking soda, and baking powder.

In a separate bowl, combine the nonfat lemon yogurt, lightly beaten egg, melted butter (or margarine), and 1 teaspoon grated lemon rind; stir these wet ingredients into the dry ingredients just until moistened.

Gently fold in the blueberries.

Drop the biscuit dough by tablespoonfuls onto a greased baking sheet.

Bake at 400 degrees Fahrenheit for 15-18 minutes or until lightly browned.

While the biscuits are still warm, combine the confectioner's sugar, lemon juice, and 1/2 teaspoon grated lemon rind to create the glaze. Drizzle the glaze over the warm biscuits.
