Cranberry Orange Banana Bread

I have a secret love affair for the combination of orange and cranberries, mix in banana and I am in pure heaven. This bread is so moist, it has all the combinations, sweetness from the banana's, a little tart from the cranberries and a light taste of orange. Besides the taste, the best part about this bread is no oil or butter! Healthy, tasty and ohhhhh, so good!

  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sugar
  • 1/2 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup egg substitute
  • 2 count eggs(optional)
  • 1/2 cup unsweetened applesauce
  • 3 count mashed very ripe bananas
  • 1 teaspoon pure orange extract
  • 1 cup fresh or frozen cranberries, cut in half
  • 1 tablespoon orange zest

In a large mixing bowl, combine the baking powder, sugar, whole wheat flour, all-purpose flour, and salt until well combined.

In a separate mixing bowl, whisk together the egg substitute (or eggs), unsweetened applesauce, vanilla extract, pure orange extract, orange zest, and mashed bananas.

Gradually add the wet banana mixture to the dry flour mixture, stirring until just combined. Gently fold in the cranberries.

Pour the batter into a greased loaf pan. Bake in a preheated oven at 350°F for approximately one hour. If using 3 greased mini loaf pans, bake for 30 minutes.

The bread is done when a toothpick inserted into the center comes out clean.
