Sea Bass and Scallop Grill With Mango Guacamole
I recently discovered grilling Sea Bass from one of our best friends, Jim. He has lost a significant amount of weight, partially due to switching to fish, most nights, for dinner. We had some last weekend and I realized, why he's been eating sea bass for dinner almost every night. The texture and flavor is so buttery and decadent, yet light at the same time (if that makes any sense). Fish never leaves me with that heavy, weighted feeling I get from steak.

- 1 pounds fresh sea bass
- 1 pounds fresh scallops
- Old Bay seasoning
- extra virgin olive oil spray
- 1 small mango, peeled, seeded and diced
- 1 ripe avocado
- 1/2 cup grape tomatoes, halved
- 1 jalapeno, seeded and diced
- handful fresh cilantro, diced
- 1 lime, juiced
- to taste coarse sea salt and fresh ground pepper
Instructions
Step 1
<a href="/H3S4YV46">Preheat </a>the <a href="/2V2PRWTZ">grill </a>to medium <a href="/XZFHRHHF">heat. </a> Spray all sides of seafood with olive oil spray and <a href="/H7TNTGFZ">season </a>with the Old Bay <a href="/MYJ2HRB7">Seasoning. </a> Place on <a href="/2V2PRWTZ">grill </a>pan or foil in a preheated <a href="/2V2PRWTZ">grill. </a> <a href="/2V2PRWTZ">Grill </a>until fish begins to flake and the <a href="/G38PSPJV">scallops </a>become firm and <a href="/D434P8MH">browned </a>on the outside.
Step 2
Add the guacamole ingredients to a small bowl and <a href="/LYM2NCDW">mash </a>with a fork while seafood is cooking.
Step 3
<a href="/R34ZSY3M">Top </a>each <a href="/3JDX2Q84">slice </a>of fish with two tablespoons of mango guacamole.
