- 1 cup okra sliced into ½ inch pieces
- 1/2 teaspoon black pepper
- 1 leaf bay
- 1/2 teaspoon thyme
- 2 count scallions, chopped
- 4 tablespoons vegetable oil
- 1/4 cup flour
- 5 cups chicken broth
- 1 inch Andouille sausage cut in ½ slices
- 1 cup onions chopped
- 1 cup tomatoes chopped
- 1/2 cup celery chopped
- 1/2 cup green pepper chopped
- 2 cloves garlic, finely minced

Add oil to a large pot.

Heat the pot over medium flame.

Stir in the flour.

Cook, stirring constantly, until the flour begins to turn golden brown.

Slowly stir in all the broth and cook for 2 minutes. Ensure the mixture is not lumpy.

Add all ingredients except okra. Bring to a boil, then reduce heat and let simmer.
