  • 1 tablespoons Chili powder
  • 1 cups Chopped green peppers
  • Pepper
  • 3 cans 8 ounce tomato sauce
  • teaspoons Salt
  • 3 tablespoons Fresh parsley
  • 1 cups Sour cream(optional)
  • 1 cups Sliced green onions
  • 3 cups Shredded Monterey jack cheese
  • 1 pounds Ground beef

Step 1

Pre-heat oven to 425 F. Spray or lightly grease a 9" x 12" baking pan.

Brown ground beef in a skillet and drain any excess fat. Add sour cream, chopped green peppers, chili powder, cumin, 1 cup of shredded Monterey Jack cheese, and sliced green onions to the beef. Cook until all ingredients are combined and the cheese melts.

Heat the enchiladas (e.g., microwave in their bag for 30 seconds, flip, and microwave for another 20 seconds). Place 1-2 tablespoons of the beef mixture onto each enchilada and roll it up. Arrange the rolled enchiladas side by side in the prepared pan. Cover with tomato sauce and the remaining shredded Monterey Jack cheese.

Cook in the preheated oven for 30 minutes, or until bubbly.
