  • 1 pound Lean wild pig meat, fine-ground 3 times
  • 1 teaspoon Salt
  • 1 teaspoon Ground sage
  • 1 teaspoon Freshly-ground white pepper

Mix the seasonings (ground allspice, salt, ground sage, and freshly-ground white pepper) with the lean wild pig meat and enough water to give a consistency suitable for pressing into medium-sized casings.

Scald the sausages.

To serve hot, brown the scalded sausages in butter.
