- 1 medium eggplant / brinjal
- 200 grams minced pork / chicken
- 6 shitake mushrooms
- 1 chilli, chopped
- 1 small onion
- 1 teaspoon minced garlic
- 1 teaspoon roasted sesame seeds
- 1/2 teaspoon Lee Kum Kee oyster sauce
- 1/2 teaspoon light soy sauce
- 30 milliliters water
- iceberg lettuce
- corn or plain flour
- oil for frying
- 1 teaspoon oyster sauce (for marinade)
- 1/2 teaspoon corn flour (for marinade)
- 1 teaspoon sesame oil (for marinade)
- pinch salt and pepper (for marinade)
Instructions
Step 1
Lightly rinse meat and marinate for about 30 minutes.
Step 2
Rinse eggplant. Remove skin and cut into strips.
Step 3
Pat dry and coat with flour.
Step 4
Heat oil and fry eggplant till crispy.
Step 5
Remove and drain eggplant fries on paper.
Step 6
Remove excess oil in wok, and saute onion till fragrant. Add garlic and fry till golden brown.
Step 7
Throw in meat, and fry till almost cooked.
Step 8
Add shitake mushrooms, chillies, seasoning and water. Simmer to reduce sauce.
Step 9
Add eggplant fries and quickly mix well on high heat so that the fries do not turn soft and mushy.
Step 10
