- 4 eggs eggs, lightly beaten
- minced parsley(optional)
- 2 tablespoons margarine
- 1 cup skim milk
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 cup fat-free parmesan cheese
- 2 cups cooked macaroni
- 8 ounces tomato paste
- 1 cup chopped onion
- 12 ounces Morningstar Farms Recipe Crumbles
- water
- salt(optional)
- pepper(optional)
Instructions
Step 1
Spray a large skillet with cooking spray; heat over medium heat until hot.
Step 2
Saute protein crumbles and onion until onion is tender.
Step 3
Stir in tomato paste and water; cook 2 - 3 minutes longer. Season to taste with salt and pepper.
Step 4
Spoon half the macaroni into a 9" x 13" x 2" baking pan; spoon protein crumbles mixture over macaroni. Combine cheese and spices; sprinkle over casserole. Spoon remaining macaroni over the top.
Step 5
Heat milk and margarine in medium saucepan, stirring until margarine is melted. Whisk about half the mixture into the eggs; whisk egg mixture back into milk. Pour over macaroni.
Step 6
Bake, uncovered, until casserole is bubbly.
Step 7
Sprinkle with parsley.
