- 2 pound lean meat
- 4 can dark kidney beans
- 2 carrots, finely chopped
- 1 bottle dark ale
- 2 hot peppers, sliced
- 1 cup red wine
- lemon juice
- 1 pinch fresh dill
- 1 teaspoon coriander
- 1 can (14 ounce) beef broth
- 1 teaspoon cayenne
- 3 tablespoon chili powder
- 2 white onions, chopped
- 2 tablespoon olive oil
- 2 can (6 ounce) tomato paste
- 2 tablespoon cumin
- 3 clove garlic
- 1 can diced tomatoes
- salt
- sour cream(optional)
- cheese(optional)
Instructions
Step 1
Heat olive oil in a large saucepan over medium heat.
Step 2
Cook chopped onions, minced garlic, and lean meat in oil for 10 minutes, or until the meat is well browned and the onions are tender.
Step 3
Mix in the diced tomatoes with juice, dark ale, red wine, tomato paste and beef broth.
Step 4
Season with chili powder, cumin, dill, cayenne pepper, coriander and salt.
Step 5
Stir in carrots, 2 cans of the beans, and hot chile peppers.
Step 6
Reduce heat to low, and simmer for 2 hours.
Step 7
Stir in the 2 remaining cans of beans, and simmer for another 30 minutes.
Step 8
Top with sour cream and cheese if desired.
