Prawns with french sauce Armoricaine

  • 800 gram Prawns
  • 2 carrots
  • 1 turnip
  • 1 leek
  • 20 cl white wine
  • 30 cl water
  • 4 tablespoons tomato paste
  • Olive oil(optional)
  • Salt and pepper(optional)

Step 1

Wash and peel the vegetables. Coarsely cut the carrots, turnip, and leek, then blend them.

In a hot pan, add a tablespoon of olive oil and fry the blended vegetable mixture for 5 minutes over medium heat.

Incorporate the tomato paste and stir well.

Add the prawns, white wine, water, salt, and pepper.

30 minutes

Cover and simmer for 30 minutes over medium heat. (If the sauce is too thick, dilute by adding more water or white wine.)

Taste and adjust seasoning.
