  • 3 pounds pork shoulder
  • cup minced onion
  • 4 teaspoons sage
  • teaspoon savory
  • 3 teaspoons salt
  • 1 cup chopped parsley
  • teaspoon chervil
  • teaspoon marjoram
  • 1 dash allspice
  • 6 teaspoons water

Chill pork for about 20 minutes to make grinding easier.

Combine all ingredients except for the water and egg. Sprinkle this mix over the pork.

Grind the pork.

Add the water and egg to the ground pork mixture.

Mix in a mixer with a flat beater for 1 minute on stir speed.
