The Lorax Cake Brings This Dr. Seuss Character to Life

The Lorax cake from Diamonds for Dessert brings this Dr. Seuss character to life.  With the release of The Lorax movie, adorable confections have been popping up on our food radar, anything from cake pops to bento boxes. Susan, the cake decorated, was inspired by the movie's poster and it's whimsical animation.  She made a classic white cake and separated it into three batches that were each colored blue, pink, and yellow.  The trees were constructed with with cotton candy and a bit of paper.  Candy melts were used to make the impressive Lorax logo and characters.  A step by step tutorial is available on the website.

Ingredients:

Cake:
1 cup milk, room temperature
6 egg whites
1 tsp almond extract
1 tsp vanilla extract
3/4 cup (1 1/2 sticks) butter, room temperature
2 1/4 cups flour
1 3/4 cups sugar
4 tsp baking powder
1 tsp salt
pink, blue, yellow gel food coloring

Frosting:
1 1/2 cup (3 sticks) butter, room temperature
3-4 cups powdered sugar
3 tbsp milk
2 tsp vanilla extract
1 tsp almond extract
green food coloring
