Fideo is the Spanish word for a noodle of any type. In Mexico, it refers to a type of pasta similar to angel hair (capellini) or vermicelli. In Spain it refers to very short noodles used in place of rice in some dishes in Spanish cuisine. It is commonly used in soups. There are a wide variety of recipes, but the basic recipe calls for lightly browning the fideo in oil, then adding a base of chicken or beef broth, with pureed tomato, chile peppers, garlic, and onion. Cilantro, beef, chicken, corn, or other ingredients may also be included. The mixture is then boiled until the fideo and other ingredients are cooked. When served it can be garnished with lime or lemon juice, chile or hot sauce, sour cream, and/or white Mexican cheese.

'Fideos', portuguese for Spanish 'fidellos' or 'fidellos tostados' - are most commonly toasted in a slightly greasedpan (one tbsp plain / olive oil) possibly with a finely minced onion. Then water or chichen stock is poured over and to the boil. At this stage further ingredients may be added [tomato sauce, meat, etc.] for a 15 min 'steaming' [vapor slowy rising from mix covered with a lid]. Toast & Steam as in pilaf / pilaw rice cooking.
