Ajvar is made from roasted red peppers and eggplants that are combined to a thick paste or relish. Caramelized onions and garlic are often added, as is sugar and vinegar to aid in preservation. Known throughout the Balkans, ajvar is a traditional relish in Croatia, and is made in late fall when the pepper harvest is in full swing.

Ajvar (Cyrillic: Аjвар оr Айвар; pronunciation: ]) is relish made principally from red bell peppers, with eggplant, garlic and chili pepper. It is predominantly popular in the Balkans. Depending on capsaicin content in bell peppers and the amount of added chili peppers, it can be sweet, piquant (the most common), or very hot. Ajvar can be consumed as a bread spread, a condiment, or as a salad.
