“Doufeu” is French for “gentle heat” and is a pot similar to a Dutch oven but with a concave lid. It is excellent for braising and roasting. Ice cubes are placed inside the concave lid to encourage condensation for continuous basting while cooking. Food cooked in a Doufeu is often moist and succulent.
