Mini Eggplant Pizzas

Ingredients

1 large eggplant

1 1/2 cups pasta sauce

1 cup mozzarella cheese, shredded

Preparation

Preheat oven to 350 degrees F

Cut Eggplant into 1 inch thick slices

Add pizza sauce and cheese to each slice

Place on greased cookie sheet

Spray tops of "pizzas" with cooking spray

Bake for 25 minutes
