  • 6.0 ounce Salmon steak/fillet
  • 0.5 teaspoon salt and paprika
  • 1.0 tablespoon Extra Virgin Olive Oil or Extra Virgin Coconut Oil(optional)
  • 2.0 tablespoon freshly squeezed lemon juice
  • 3.0 cup chopped Romaine lettuce
  • 2.0 tablespoon Renee's light Caesar dressing
  • 1/2-1 handful Freshly grated Asiago or Parmesan cheese(optional)
  • 1 tablespoon slivered toasted almonds(optional)
  • black pepper(optional)

Heat up a skillet or frying pan. Sear the salmon in coconut oil or olive oil, adding salt and paprika, until lightly browned on each side. Cook to your preferred doneness; the recipe author prefers it slightly undercooked. Top the salmon with freshly squeezed lemon juice and let it sit in the pan for about 1 minute.

In a large bowl, mix the chopped romaine lettuce with the Caesar salad dressing. Transfer the dressed lettuce to a large plate.

Top the salad with freshly grated Asiago or Parmesan cheese and, optionally, sprinkle with slivered toasted almonds. Place the sliced salmon on top of the salad. Garnish with additional fresh lemon juice and black pepper to taste.
