Flawless Chocolate Fudge
Making fudge at the holidays is a family tradition. I've become the primary candy maker in my immediate family using this recipe that I adapted from a 1981 cookbook called Favorite Brand Name Recipes. I make this and give it away to coworkers, friends and family.

- 2.25 cup sugar
- 0.5 stick unsalted butter
- 0.75 cup fat free evaporated milk
- 7.0 ounce jar of marshmallow fluff
- 0.75 teaspoon kosher salt
- 0.75 teaspoon real vanilla extract
- 12.0 ounce good quality semisweet chocolate chips
- 0.5 cup chopped nuts(optional)
Instructions
Step 1
Combine sugar, unsalted butter, fat free evaporated milk, marshmallow fluff, and kosher salt in a saucepan, stirring over low heat until blended.
Step 2
Increase heat to moderate and bring the mixture to a boil. Be careful not to mistake air bubbles for boiling.
Step 3
Boil slowly, stirring constantly for a full 5 minutes.
Step 4
Remove from heat and stir in vanilla extract and chocolate chips until the chocolate is melted. If desired, stir in chopped nuts.
Step 5
Pour the fudge into a 9x9 inch pan that has been sprayed with butter-flavored cooking spray and cool completely.
