Recipe: Chickpea Salad edit
Chickpeas (garbanzo beans) are an excellent, inexpensive source of protein.

cup chopped red onion |

cup fresh parsley |

tablespoons chopped mint leaves |

cup fresh lemon juice |

Step 1 |
Drain peas; add remaining ingredients in wide bowl - add peas and toss well; chill. May be refrigerated 1 or 2 days to allow flavors to blend. Garnish with red onion. |
