Chickpeas (garbanzo beans) are an excellent, inexpensive source of protein.

cans chickpeas

½

teaspoon crushed garlic

½

cup chopped red onion

¾

cup fresh parsley

3

tablespoons chopped mint leaves

½

cup fresh lemon juice

½

cup olive oil

Salt and pepper to taste

Step 1

Drain peas; add remaining ingredients in wide bowl - add peas and toss well; chill. May be refrigerated 1 or 2 days to allow flavors to blend. Garnish with red onion.
