- 4 slices provolone
- 1/4 cup fresh parsley, chopped
- 4 slices prosciutto
- 1 1/2 cup mixed mushrooms, sliced
- Pinch salt
- Pinch pepper
- 2 cloves garlic, minced
- 1 green bell pepper, cut into strips
- 1 yellow onion, sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon fresh parsley leaves, chopped
- 4 veal cutlets
- 1/2 teaspoon ground black pepper
- 1/4 cup meat broth (from 1 cube)
- 3/4 cup homemade bread crumbs
- 2 eggs, beaten
- 1/4 cup milk
Instructions
Step 1
In a small bowl, beat the eggs and milk together, then add the meat broth and set aside.
Step 2
Place the bread crumbs, ground black pepper, and 1 teaspoon of fresh parsley leaves in a separate bowl. Mix and combine.
Step 3
Flatten the veal cutlets thin between two sheets of wax paper.
Step 4
Dredge the flattened veal in the egg mixture and then in the bread crumbs. Refrigerate for 30 minutes.
Step 5
Fry the veal in 1 tablespoon of butter and olive oil until lightly browned, then drain on a paper towel.
Step 6
In a separate large frying pan, sauté the onions, bell peppers, mushrooms, and garlic until tender. Season with salt and pepper.
Step 7
Place the fried veal in a large casserole dish and top with the sautéed peppers and onion mixture.
Step 8
Top each cutlet with a slice of prosciutto and then a slice of provolone.
Step 9
Bake in the oven at 220˚C for 15 minutes or until the cheese is melted and slightly brown.
Step 10
Garnish with fresh parsley.
