Caramelized Banana

Ingredients

1 banana under-ripe
1 teaspoon butter
1 tablespoon brown sugar
1 pch ground cinnamon (1 to 2)
1 tablespoon rum (optional) or brandy or

Preparation

Slice banana in half lengthwise and arrange in a shallow oval baking dish or gratin. Dot with butter, sprinkle with brown sugar and cinnamon. If desired, drizzle with rum, brandy, or sherry.

Bake 8 minutes in a preheated 450 degree oven, or until sugar caramelizes and is bubbling. Cool enough to avoid burning your tongue, then eat.
