Fried Eggplant Sandwich With Melted Provolone Cheese

eggplant
cup
One of
buttermilk
cup
One of
flour
Peanut
oil
Tomato
and
basil marinara
sauce
Provolone
Cheese
Salt
and pepper

bagel thins
Preparation

Peel
and
cut
eggplant into thick
slices

Place eggplant in bowl, saturate with buttermilk, and
soak
for two hours

Heat
peanut oil to 375°

Remove eggplant, drain, and add
salt
and pepper

Combine with flour and cook eggplant until it is a golden
brown
color
about four to five minutes

Heat
your toaster oven to 300°

Layer cheese in between two eggplant
slices
on
top
of a bagel thin
slice

Pour
warm
marinara sauce on
top
of second eggplant
slice
and then
top
with the second bagel
slice

Place in toaster oven and
heat
until the cheese
melts
