  • 4 unit hard green tomatoes, cut in medium wedges
  • 1/2 teaspoon fresh hot pepper, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon oregano
  • 1/2 unit clove garlic, crushed
  • 2 tablespoon chopped onion
  • 1 cup celery, cut into 1/2-inch slices
  • 1 cup sliced mushrooms(optional)
  • 1 cup cubed potatoes(optional)
  • 3/4 cup red sweet peppers, cut into strips
  • 2 tablespoon oil
  • 3/4 cup green pepper, cut into strips (skins peeled off)

Add tomato wedges and cook until partially cooked to retain crispness. Excellent to <a href="/technique/Y6MVNCHX/serve">serve</a> over cooked rice.
