- 4 unit hard green tomatoes, cut in medium wedges
- 1/2 teaspoon fresh hot pepper, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon oregano
- 1/2 unit clove garlic, crushed
- 2 tablespoon chopped onion
- 1 cup celery, cut into 1/2-inch slices
- 1 cup sliced mushrooms(optional)
- 1 cup cubed potatoes(optional)
- 3/4 cup red sweet peppers, cut into strips
- 2 tablespoon oil
- 3/4 cup green pepper, cut into strips (skins peeled off)

Add tomato wedges and cook until partially cooked to retain crispness. Excellent to <a href="/technique/Y6MVNCHX/serve">serve</a> over cooked rice.
