Ingredients
1 pkg
dry yeast
1/4 cup warm
water
(105-115 degrees)
1 3/4 cups lukewarm
milk
(scalded, then skimmed)
2 cups
flour
3 tablespoons
sugar
1 teaspoon
salt
3
eggs
1/4 cup
butter
, softened
Preparation
1
Dissolve
yeast
in
warm
water. Add a pinch of sugar. Leave 10 minutes to proof -
yeast
should show that it's active by creating a
foam
, and bubbling.

Add all ingredients to a large mixer bowl and
beat
with a rotary beater until smooth.

Cover and let rise in a
warm
place, free from draft for 1 1/2 hours.
Stir
down batter. Cover and refrigerator overnight.

Stir
down batter. Pour onto center of a hot,
seasoned
waffle iron.
5
Bake
each waffle about 5 minutes, or until
steaming
stops.
