BeginnerOne of my favorite recipes from an aunt. The subtle taste of coconut sets this crispy oatmeal cookie apart from the usual oatmeal cookie.

- 1/2 cup margarine
- 1/2 cup shortening
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cup flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 cup oatmeal
- 1/2 cup coconut
- raisins and nuts(optional)

Step 1
Cream margarine and shortening.

Add brown sugar, sugar, eggs, and vanilla. Mix well.

Add flour, baking soda, and salt. Mix well.

Add oatmeal and coconut. Mix well.

Stir in raisins and/or nuts (optional).

about 8 minutes or until light golden brown
Using a teaspoon, place on an ungreased cookie sheet and bake at 350 degrees for about 8 minutes or until light golden brown.
