  • 2.5 cups all-purpose flour
  • 1 cup sugar
  • 1.5 tablespoons baking powder
  • 0.5 teaspoons salt
  • 1 cup oil
  • 1.33 cups buttermilk
  • 1 egg egg
  • 1 teaspoons vanilla extract
  • 2 cups frozen blueberries
  • 1 cup all-purpose flour
  • 0.5 cup butter
  • 0.5 cup light brown sugar

Preheat oven to 375˚F. Line muffin tins with paper cups.

Combine flour, sugar, baking powder, and salt in a medium bowl.

In another bowl, whisk together oil, buttermilk, egg, and vanilla. Pour over the flour mixture. Mix just until combined.

Add the frozen blueberries.

Using a 2-ounce ice cream scooper, scoop the batter over the muffin cups.

Make the streusel: Combine the flour, butter, and light brown sugar and mix until it resembles coarse meal. Sprinkle about 1 tablespoon of streusel on top of each muffin.

Bake for 20 to 22 minutes or until tops are golden. Allow to cool for 15 minutes before serving.
